Also known as Crucifer, which belongs to the family of Brassicaceae. Glucosinolates, polyphenols, and flavonoids are the major bioactive compounds found in Cauliflower. Glucoiberin, progoitrin, glucoraphanin, sinigrin, gluconapin, glucoiberverin, glucobrassicin, and gluconasturtiin are the type of glucosinolates found in Cauliflower. It is a good source of potent antioxidants like Carotenoids, Sulforaphane, and Ascorbic acid that reduce the effect of superoxide. It has also good nutritional value that contains fiber, Vitamin B6, and K, pantothenic acid, folate, and minerals like Potassium, Magnesium, Manganese, and Phosphorus.
