Also known as Crucifer, which belongs to the family of Brassicaceae. Glucosinolates, polyphenols, and flavonoids are the major bioactive compounds found in Cauliflower. Glucoiberin, progoitrin, glucoraphanin, sinigrin, gluconapin, glucoiberverin, glucobrassicin, and gluconasturtiin are the type of glucosinolates found in Cauliflower. It is a good source of potent antioxidants like Carotenoids, Sulforaphane, and Ascorbic acid that reduce the effect of superoxide. It has also good nutritional value that contains fiber, Vitamin B6, and K, pantothenic acid, folate, and minerals like Potassium, Magnesium, Manganese, and Phosphorus. Intake of Cauliflower is good for the stomach, and heart.

Cauliflower is a cool-season vegetable that belongs to the Brassicaceae family, which also includes broccoli, kale, and cabbage. It is a biennial plant, meaning it completes its life cycle in two years. However, it is typically harvested in the first year, when the head is still tight and compact.Cauliflower is primarily grown in temperate regions, with the major producing countries being China, India, the United States, Italy, and France. It is a highly versatile crop and can be grown in a variety of climates, as long as there is a consistent supply of water. The ideal temperature range for growing cauliflower is between 15-20°C (59-68°F). It is typically grown in the fall and winter months, but can also be cultivated in the spring and summer.The production of cauliflower begins with the selection of high-quality seeds. These seeds are then germinated in a nursery and transplanted into the field after 3-4 weeks. The plants require well-drained, fertile soil with a pH level of 6.5-6.8. They also need regular watering and fertilization to ensure proper growth and development.
As the plants mature, the outer leaves are folded over the head to protect it from sunlight and maintain a white color. This process is known as blanching. The heads are ready for harvest when they reach a diameter of 6-8 inches (15-20 cm) and are still tight and compact. Harvesting is typically done by hand, using a knife to cut the stem just below the head. Once harvested, the cauliflower heads are packed into crates and transported to processing and packaging facilities.
