          Chicory (Cichorium intybus) is a perennial herbaceous plant that is cultivated for its roots, which are used as a coffee substitute and as a source of inulin, a natural prebiotic dietary fiber. Chicory is native to Europe, western Asia, and North Africa, but is now cultivated in many countries around the world, including the United States, China, India, and Brazil. Chicory plants usually grow to a height of 2-3 feet and have bright blue, lavender, or white flowers that bloom in the summer. The roots are harvested in the fall after the plant has reached maturity. The harvesting process involves digging up the roots and removing the leaves and stems. The roots are then washed, chopped, and dried before being roasted and ground for use as a coffee substitute.
