Citric acid is a natural compound found in citrus fruits such as lemons, oranges, and limes, although most commercial citric acid is produced through fermentation processes. Citric acid is a weak organic acid. Production typically begins with the cultivation of a specific strain of mold, Aspergillus niger, which is used to ferment carbohydrates such as corn syrup or molasses. During fermentation, the mold produces citric acid as a metabolic byproduct. The fermented mixture is then treated with calcium hydroxide to neutralize it and precipitate calcium citrate, which is further processed to obtain citric acid through filtration and purification steps.
