Green coffee is the raw, unroasted form of the coffee bean, which is extracted from the coffee plant, known as Coffea. The majority of green coffee is produced and sourced from coffee farms located in countries with a tropical climate, such as Brazil, Colombia, Vietnam, Indonesia, and Ethiopia. These countries are renowned for their high-quality coffee production, and collectively make up around 60% of global coffee production.
The green coffee beans are harvested from the coffee plant, which typically produces fruit known as "coffee cherries". These cherries usually contain two coffee beans in their center, which are the seeds of the plant. The coffee beans are extracted from the cherries through a process known as wet or dry processing. Wet processing involves soaking the cherries in water and removing the outer layers through a mechanical pulping process. Dry processing involves drying the cherries and then using a machine to hull the beans.
Once the beans are extracted, they are graded based on their size, color, and defects. The grading system varies between countries, but generally, the higher the grade, the better the quality of the beans. The graded beans are then sorted and transported to green coffee storage facilities, where they are kept in a cool and dry environment before being further processed.
