Palatinose or isomaltulose is a disaccharide made up of fructose and glucose. Its quite interesting name is derived from Germany’s Palatinate region and is manufactured from beet sugar. Interestingly, the scientists behind its development rearranged the existing chemical bond between fructose and glucose molecules present in beet sugar to form the new compound. Nevertheless, Palatinose is not that sweet like sugar but it is pleasant in taste. Therefore, it can replace table sugar and is popular among athletes. Palatinose possesses a low glycaemic index, i.e. 32, as a result, human body cannot easily break down the strong chemical bond within its molecules.
