Also known as Japanese arrowroot or Chinese arrowroot that belongs to the family Fabaceae. This plant is native to Japan and southeast China. Puerarin, daidzin, and daidzein are the major bioactive components present in this root. It is a well-known ayurvedic medicine. It is a good source of potent antioxidants like isoflavone puerarin that neutralize the effect of oxidative stress and have many health benefits.

The production of kudzu involves growing the plant in hot and humid climates, with well-drained soil. It is typically grown in the southern United States, particularly in states such as Alabama, Georgia, and Mississippi. The plant is harvested after 3-5 years of growth, when the roots are approximately 2 inches in diameter.
Once harvested, the roots are cleaned and dried, then ground into a powder for use in various applications.
