The production of lemon grass begins with planting the grass in well-drained soil with good sunlight. The grass grows in tufts, with each tuft consisting of several stems that can grow up to 3 feet in height. It takes about 3 months for the grass to reach maturity, and it is harvested by cutting the stems close to the ground. This encourages new growth and allows for multiple harvests throughout the year.
Sourcing of lemon grass is primarily done through cultivation, as it is not commonly found growing in the wild. In Asia, it is mainly sourced from small-scale farms, while in other regions, it is grown on larger plantations for commercial purposes.
