Carrots are root vegetables belonging to the Apiaceae family. Their primary bioactive constituents include phenolics, polyacetylenes, and carotenoids, with β-carotene, α-carotene, lutein, β-cryptoxanthin, lycopene, and zeaxanthin being especially notable. Rich in fiber, carrots also boast an array of vitamins and minerals, including Vitamin A, Biotin, Vitamin K1, Vitamin B6, Vitamin C, and essential minerals like potassium and calcium. Serving as a reservoir of powerful antioxidants, they are especially rich in carotenoids and anthocyanins.

Carrots are a popular and versatile ingredient in cooking, making them a highly demanded agricultural product. Carrots are primarily produced through farming, although some varieties can also be grown in greenhouses.Carrot production begins with the selection of high-quality seeds. Carrot seeds are tiny and require proper soil conditions for optimal germination. They are usually planted in well-drained sandy loam soils that are free of rocks and debris. After planting, the seeds are irrigated and covered with a thin layer of soil. It takes about three weeks for the seeds to germinate. During this time, carrot plants need to be watered regularly and kept free from weeds.Once the plants are established, the carrots are ready to be thinned out. This involves removing some of the plants to allow more room for the remaining ones to grow. Thinning also helps to ensure that the carrots grow straight and uniform in size. Carrots require consistent moisture throughout their growing period, so regular irrigation is necessary.
The carrots will reach maturity in about 70 to 80 days, depending on the variety and growing conditions. Once mature, they are harvested by pulling them out of the ground by hand or by using specialized equipment. Some farmers also use mulch to help with harvesting, as it makes it easier to pull the carrots out of the ground without damaging them.
