Cassia cinnamon is also known as Chinese cassia or Chinese cinnamon belongs to the family Lauraceae. It is used as a spice made from the inner bark of this plant and is well known for its aromatic flavor. It is native to South China, and South Asia. Cinnamon aldehyde, cinnamic alcohol, cinnamic acid, and cinnamate are the major bioactive components present in the inner bark of cinnamon. It is loaded with powerful antioxidants like polyphenols.

After harvesting, cinnamon undergoes a thorough cleaning process to remove any dirt and impurities. Following this, the outer bark is stripped away to reveal the inner bark, which is the part used for spice. The inner bark is then typically rolled into quills or sticks and subjected to drying methods such as air-drying or low-temperature dehydration. These methods are chosen to preserve the essential oils, flavor, and aromatic properties present in the bark. Once dried, the cinnamon sticks can be further processed by grinding into a fine powder.
