Harvesting Dong Quai is a meticulous process, usually carried out in the late autumn when the roots have accumulated their maximum beneficial compounds. The entire plant is dug up, but it is the thick, aromatic roots that are most valued. The roots are cleaned to remove soil and then sliced into pieces for drying. The drying process is crucial as it preserves the root’s active constituents. The dried roots are often further processed into powders, extracts, or sliced roots for various applications.
