The production of elderberries begins with cultivating the plants in well-drained, fertile soil, often in regions with moderate climates. Elderberries thrive in both wild and cultivated environments, often found along forest edges, roadsides, and in orchards. The plants are propagated through seeds, cuttings, or root divisions, and they require regular pruning to promote healthy growth and berry production.

Harvesting elderberries typically takes place in late summer to early fall when the berries are fully ripe, indicated by their deep purple or black color. Harvesting is usually done by hand, as the delicate clusters of berries need careful handling to avoid damage. The berries are collected along with the entire cluster and later separated from the stems during processing.

After harvesting, the elderberries are promptly cleaned to remove any debris or impurities. The berries can be used fresh, but they are often dried, frozen, or processed into juices, syrups, and extracts to preserve their properties and extend shelf life. The drying process involves spreading the berries out on drying racks or using dehydrators to remove moisture while maintaining their nutritional content.
