Yacon, also known as the Peruvian ground apple, is a tuberous root vegetable that belongs to the sunflower family. It is native to the Andean region in South America, particularly Peru and Bolivia. The plant grows up to 6 feet tall with large green leaves and produces small, sunflower-like flowers. The tubers can be harvested 6-8 months after planting.

Yacon is primarily grown in the Andean region of South America, with Peru being the largest producer and exporter. However, it is also cultivated in other Latin American countries, such as Colombia, Venezuela, and Argentina. In recent years, it has gained popularity in other regions such as Australia, New Zealand, and some parts of Europe, where it is being grown on a smaller scale.

The moisture content in Yacon Powder is not more than 10% as more than the limit it may cause microbial contamination.
