It is a popular ingredient in many cuisines, especially in Buddhist and Hindu vegetarian dishes, as well as in traditional Chinese medicine.

          The production of lotus begins with harvesting the flowers and the seeds from the plants. The flowers are picked when they are fully bloomed and the seeds are collected from the pods after they have matured.
