The plant has been traditionally used in Ayurvedic and Chinese medicine for its medicinal properties, and has recently gained popularity in the culinary world for its vibrant blue color. Blue Butterfly Pea is a fast-growing perennial plant that thrives in warm and humid climates. It requires well-drained soil and plenty of sunlight to grow. The plant can be propagated through seeds or stem cuttings and takes about 3-4 months to mature. It is typically harvested in the early morning when the flowers are in full bloom, as this is when the plant's natural pigment, called anthocyanin, is at its highest concentration. The flowers are then air-dried and ground into powder or used fresh in various applications.
