Harvesting elderberries typically takes place in late summer to early fall when the berries are fully ripe, indicated by their deep purple or black color. The berries are collected along with the entire cluster and later separated from the stems during processing.
After harvesting, the elderberries are promptly cleaned to remove any debris or impurities.
