Rhubarb is a perennial vegetable and belongs to the family Polygonaceae. It is commonly known as “pie plant” because of its tart flavor and its use in baking pies. Rhubarb is native to China and was used for medicinal purposes before it was eventually cultivated for culinary use.Rhubarb is a cool-season crop and requires a long period of low temperatures to initiate growth. It is typically propagated from crowns or division of established plants. Rhubarb requires well-drained, fertile soil with a pH between 5.5 and 6.5. It is usually planted in early spring or late fall and takes one to two years to establish before it can be harvested. The plants need to be well-watered and weeded regularly.After harvesting, rhubarb undergoes thorough washing and cleaning to remove soil and impurities. Following the cleaning process, the rhubarb stalks are cut into smaller pieces and dried using methods such as air-drying or low-temperature dehydration to preserve the integrity of their nutrients and bioactive compounds. Once dried, the rhubarb can be finely ground into a powder or left in dried chunks, creating a concentrated form that retains the plant's natural flavor and potential health benefits. This dried rhubarb is then packaged in airtight containers to prevent moisture absorption and maintain freshness, ensuring that the rhubarb retains its quality and nutritional properties from farm to table.
