Harvesting ginseng is a meticulous process, usually taking place in the fall when the roots have reached their peak development. The plants are carefully dug up by hand to avoid damaging the valuable roots. Post-harvest, the roots are cleaned to remove soil and then dried using air drying or low-temperature methods to preserve their quality and active compounds.

Major components

Polysaccharides (acidic polysaccharides known as ginsenan), phenolic compounds (including elemicin and dauricine) [1]. Amino acids including arginine, glutamic acid, aspartic acid, glycine, leucine, alanine, proline, lysine, serine, threonine, proline, phenylalanine, isoleucine, and tyrosine are highly accumulated; volatile oil in ginseng comprises aldehydes, heterocycles, sesquiterpenoids (hexadecanoic acid (32.28 %) and falcarinol (29.64 %)), fatty acids, fatty acid ester compounds, and alkane hydrocarbons; Polyacetylene; Ginseng contains more than 12 alkaloids, including adenosine, spermine, and choline. Ginseng also contains various trace elements, vitamins, and enzymes [2].

Other constituents

Flavonoid (Kaempferol), and alkaloids (fumarine and girinimbi), three β-carboline alkaloids were isolated from Ginseng root, fatty acids, and mineral oils [1].
