Papain is a proteolytic enzyme from the papaya tree (Carica papaya). It is extracted from the fruit through hydrolysis, involving crushing, drying, and purifying the fruit to isolate papain. Alternatively, it is synthetically produced using genetically modified microorganisms, where recombinant DNA technology enables large-scale production. Papain can also be sourced from the papaya tree's latex, though this method is less common due to its complexity and labor intensity.
